This soondubu inspired soup comes together soup-er fast. If you're looking for a quick, healthy, low-cal, and filling meal at home, we highly recommend it. If you like these flavors, check out local Korean restaurants for the real deal, which will blow this out of the water.
Ingredients:
Large white onion (1/2 - chopped)
Gochujang paste (I heaping Tbs)
Lime (2: 1.5 juiced, 1 cut into wedges for garnish)
Kimchi (1 package)
Chicken or Veggie Broth (1 container)
Onion (1/2 large)
Tofu
Scallions - 1 bunch chopped (1/4 reserved for garnish)
5 minute Egg (optional)
Noodles (Rice, Egg, Shirataki) or Rice
Recipe:
Heat 1 tbs oil in a large thick bottom pot on medium/low heat
Add gochujang and stir until it's loosened
Add onions and sauté until they're translucent
Add lime juice (1.5 limes) and stir until it's saucy and smells great
Stir in kimchi and scallions
Add chicken broth let cook for 5-10 mins on medium/high heat
Add tofu and cook another 5-10 minutes so the flavor is absorbed
Serve with over noodles or rice and top with egg. Garnish with scallions, lime wedge, and/or cilantro.
