Leftover Salsa Chicken
Don't toss those tiny plastic cups of liquid gold after taco night
Ingredients:
Leftover salsa/sauce from taco night
1-1.5 lbs of chicken (or tofu, or shrimp, you get the idea)
High heat oil (coconut, peanut, vegetable)
Greek yogurt
Lemon juice
Recipe:
Salt & pepper chicken
Brown in oil in oven-safe pan (on all sides)
Cover in red salsa
Finish in 400° oven until temp is 165°
Mix lemon juice in yogurt
Top with yogurt and green sauce (or something green like a chopped herb)
