Leftover Salsa Chicken

Don't toss those tiny plastic cups of liquid gold after taco night

Ingredients: 

  • Leftover salsa/sauce from taco night
  • 1-1.5 lbs of chicken (or tofu, or shrimp, you get the idea)
  • High heat oil (coconut, peanut, vegetable)
  • Greek yogurt
  • Lemon juice

Recipe:

  1. Salt & pepper chicken
  2. Brown in oil in oven-safe pan (on all sides)
  3. Cover in red salsa
  4. Finish in 400° oven until temp is 165°
  5. Mix lemon juice in yogurt
  6. Top with yogurt and green sauce (or something green like a chopped herb)
