Cauliflower Soup 

A cozy soup recipe with little time commitment:

Ingredients: 

  • 1 tbsp butter (or any oil)
  • 1/2 tsp nutmeg
  • 1/2 onion - chopped
  • 1 head cauliflower - chopped
  • 2+ cups almond milk (or any milk)
  • black pepper - a lot of it
  • salt - how you like it
  • garnish - lemon juice, scallion
  • optional: greek yogurt, turkey bacon, garlic chili oil

Recipe:

  1. Heat saucepan on medium-low heat
    1. If you want turkey bacon, start by sautéing in a little oil/fat until cooked and set aside. 
  2. Add butter
  3. Add nutmeg and stir until the aroma is released
  4. Add onions and sauté until translucent
  5. Add chopped cauliflower, 1 cup of milk, a generous pinch of salt, and even more pepper
  6.  Cover pot and reduce to a simmer until cauliflower is tender (you can poke with a fork without a fight)
    1. If you want garlic chili oil, use this time to make it. Slice 2-3 cloves of garlic and cook in olive oil over low heat with red pepper flakes until the garlic crisps. 
  7. Blend the soup with an immersion or standard blender -- add more milk until you like the consistency
  8. Season with more salt and pepper to taste 
  9. Options: fold in some greek yogurt for bright creaminess, turkey bacon for salt and depth, or both for the full effect
  10. Garnish with scallions, squeezed lemon juice, and garlic chili oil.
