Almond Chicken Parm

Chicken parm

Ingredients: 

  • Chicken breast
  • Almond flour (or any flour*)
  • Grated parm
  • 2 Eggs - beaten
  • Lemon zest
  • Mozzarella

*Keto and gluten free friendly with the almond flour

Recipe:

  1. Cut the chicken in half lengthwise, cover w/ parchment, and hit with a heavy thing to thin it out
  2. Salt & pepper chicken and sprinkle with some flour
  3. Beat egg in shallow dish
  4. Combine flour, parm, zest, salt & pepper in another shallow dish  
  5. Heat oil on medium high heat (enough to come up a little on the sides. turn it down if it starts to smoke.)
  6. Using tongs, dip chicken in egg then flour, then add to pan
  7. Cook about 2-3 mins each side - lower heat if crust is getting too dark
  8. Top with mozz and broil on high heat to melt. Chicken should be at 165° before eating
  9. Serve with lemon greens, spaghetti squash, and a leftover meatball if you have it
